Albondigas Soup

Ingredients
- 1 pound ground beef
- 1/4 cup cooked rice
- 1/4 cup fresh cilantro, chopped
- 1/4 cup onion, finely chopped
- 1 garlic clove, minced
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 8 cups beef broth
- 2 medium potatoes, diced
- 1 carrot, diced
- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried oregano
- 2 cups fresh spinach, chopped
- Juice of 1 lime
- Additional cilantro, for garnish
Instructions
- In a large bowl, combine the ground beef, cooked rice, chopped cilantro, onion, garlic, egg, salt, black pepper, and cumin. Mix until well combined. Form small meatballs, about 1 inch in diameter.
- In a large pot, bring the beef broth to a simmer over medium heat.
- Carefully drop the meatballs into the simmering broth. Let them cook for about 10 minutes.
- Add the diced potatoes, carrots, zucchini, diced tomatoes, and oregano to the pot. Stir gently and simmer for an additional 15-20 minutes, or until the vegetables are tender and meatballs are cooked through.
- In the last few minutes of cooking, add the chopped spinach and lime juice to the pot, stirring until the spinach wilts.
- Once everything is well combined and heated through, taste and adjust seasoning if needed.
- Serve hot, garnished with additional cilantro if desired. Enjoy this flavorful and comforting soup!
