Ingredients

  • 1 pound ground beef
  • 1/4 cup cooked rice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup onion, finely chopped
  • 1 garlic clove, minced
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 8 cups beef broth
  • 2 medium potatoes, diced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 2 cups fresh spinach, chopped
  • Juice of 1 lime
  • Additional cilantro, for garnish

Instructions

  1. In a large bowl, combine the ground beef, cooked rice, chopped cilantro, onion, garlic, egg, salt, black pepper, and cumin. Mix until well combined. Form small meatballs, about 1 inch in diameter.
  2. In a large pot, bring the beef broth to a simmer over medium heat.
  3. Carefully drop the meatballs into the simmering broth. Let them cook for about 10 minutes.
  4. Add the diced potatoes, carrots, zucchini, diced tomatoes, and oregano to the pot. Stir gently and simmer for an additional 15-20 minutes, or until the vegetables are tender and meatballs are cooked through.
  5. In the last few minutes of cooking, add the chopped spinach and lime juice to the pot, stirring until the spinach wilts.
  6. Once everything is well combined and heated through, taste and adjust seasoning if needed.
