Chocolate Earthquake Cookies

Ingredients

  • 1 cup semisweet chocolate chips
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for rolling

Instructions

  1. Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a microwave-safe bowl, melt the semisweet chocolate chips. Heat in 20-second intervals, stirring after each until smooth. Allow it to cool slightly.
  3. In a large mixing bowl, combine the granulated sugar, brown sugar, and cocoa powder. Mix well.
  4. Add in the melted chocolate, eggs, and vanilla extract to the sugar mixture. Stir until fully combined.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix!
  7. Chill the dough in the refrigerator for about 30 minutes. This helps the cookies hold their shape while baking.
  8. Once chilled, scoop out tablespoon-sized portions of the dough, roll them into balls, and then roll them in powdered sugar until well coated.
  9. Place the dough balls on the prepared baking sheet, spaced about two inches apart.
  10. Bake in the preheated oven for 10-12 minutes. The cookies should look slightly underbaked in the center; they will continue to cook as they cool.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Enjoy these decadent Chocolate Earthquake Cookies, perfect with a glass of cold milk or a warm cup of coffee!
