72 hour sous vide short ribs –There’s something incredibly satisfying about a perfectly cooked short rib. Over the weekend, I decided to put my sous vide skills to the test and the results were nothing short of amazing. Cooking them for 72 hours at 133°F transformed these cuts of meat into a melt-in-your-mouth experience that I simply had to share!
Sous Vide Short Ribs

Ingredients
- 4 lbs beef short ribs
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped
- 4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 cup beef broth
Instructions
- Start by preparing the short ribs. Season them generously with salt and black pepper on all sides.
- In a large skillet, heat the olive oil over medium-high heat. Sear the short ribs for 2-3 minutes on each side until browned. This step is critical for enhancing the flavor of the beef.
- In a bowl, mix together the rosemary, garlic, and Dijon mustard. Rub this mixture all over the short ribs.
- Place the short ribs into a vacuum-sealable bag. Pour in the beef broth, making sure the ribs are coated well. Seal the bag using a vacuum sealer.
- Preheat your sous vide water bath to 133°F (56°C). Once ready, submerge the sealed bag in the water, ensuring it is fully submerged. Cook the short ribs for 72 hours.
- After the cooking time is up, carefully remove the bag from the water bath. Take the short ribs out of the bag, reserving the liquid for sauce.
- To finish the short ribs, heat a skillet over high heat. Sear the ribs for 1-2 minutes on each side until a crust forms. This step adds a wonderful texture to the dish.
- If desired, strain the reserved cooking liquid and reduce it in the skillet to create a delicious sauce to drizzle over the short ribs.
- Serve the short ribs hot, paired with your favorite sides, and enjoy the depth of flavor that comes from this slow-cooking method. Your taste buds will thank you!
