Bacon Wrapped Salmon with Smashed Potatoes
Here’s a beautiful image of our star dish, Bacon Wrapped Salmon:

Ingredients:
- 4 salmon fillets
- 8 slices of bacon
- 2 pounds of baby Yukon gold potatoes
- 1/4 cup of olive oil
- 2 cloves of garlic, minced
- 1 tablespoon of fresh rosemary, chopped
- Salt and pepper to taste
- Juice of half a lemon
- Fresh parsley for garnish
Instructions:
- Preheat your oven to 400°F (200°C).
- Start by wrapping each salmon fillet with two slices of bacon, securing them with toothpicks if necessary. Season the salmon with salt and pepper.
- In a baking dish, arrange the bacon-wrapped salmon and drizzle with lemon juice. Bake for about 20-25 minutes or until the salmon is fully cooked, and the bacon is crispy.
- While the salmon is baking, prepare the smashed potatoes. Boil the baby Yukon gold potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let them cool slightly.
- Place the potatoes on a baking sheet and gently smash them with a fork to flatten.
- In a small bowl, whisk together olive oil, minced garlic, chopped rosemary, salt, and pepper. Drizzle this mixture over the smashed potatoes.
- Bake the potatoes in the same oven for about 25 minutes, or until they are golden and crispy.
- Once both the salmon and potatoes are done, remove them from the oven. Serve the bacon-wrapped salmon alongside the smashed potatoes, garnishing with fresh parsley.
This dish is a fantastic way to impress your guests or simply treat yourself to a flavorful dinner. The combination of crispy bacon enveloping tender salmon is simply irresistible, particularly when paired with the buttery, seasoned smashed potatoes. Enjoy your meal!
