Braised Lamb Shanks with Creamy Polenta
This dish features tender braised lamb shanks that melt in your mouth, accompanied by a creamy, savory polenta that perfectly complements the succulent meat.

Ingredients:
- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup red wine
- 2 cups beef or chicken broth
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 cup polenta
- 4 cups water
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- Fresh parsley for garnish (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Season the lamb shanks with salt and pepper, then brown them on all sides in the Dutch oven. Remove the shanks and set them aside.
- Add the chopped onion, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes. Stir in the garlic and cook for another minute.
- Pour in the red wine, scraping the bottom of the pot to deglaze. Bring the mixture to a simmer and let it reduce by half.
- Return the lamb shanks to the pot, and add the broth, rosemary, and thyme. Bring to a boil, then cover with a lid and transfer to the preheated oven. Braise for about 2.5 to 3 hours, or until the lamb is tender and falling off the bone.
- While the lamb shanks are cooking, prepare the creamy polenta. In a large saucepan, bring the water to a boil. Slowly whisk in the polenta, stirring constantly to prevent lumps. Reduce heat to low and cook for about 20 minutes, stirring frequently.
- Once the polenta has thickened and is creamy, stir in the Parmesan cheese and butter. Season with salt and pepper to taste.
- When the lamb shanks are ready, remove them from the oven and let them rest for a few minutes before serving.
- Plate the creamy polenta, top it with the braised lamb shanks, and spoon some of the flavorful sauce over the top. Garnish with fresh parsley, if desired.
Savor every moment as you enjoy this comforting and hearty meal. It’s perfect for sharing with family and friends, or simply indulging on a cozy night in!
