Nigerian jollof rice with chicken and fried plantains –

Look at that beautiful spread! Jollof rice is a staple that brings life to any table, and when you pair it with some crispy fried plantains and succulent chicken, you’re in for a real treat.

Ingredients
For this fabulous feast, you’ll need:
- 2 cups long-grain parboiled rice
- 1/2 cup vegetable oil
- 1 onion, chopped
- 2 tomatoes, pureed
- 1 red bell pepper, pureed
- 4 cups chicken broth or water
- 2 tablespoons tomato paste
- 2 teaspoons thyme
- 1 teaspoon curry powder
- Salt and pepper to taste
- 4 pieces of chicken (legs or thighs work great)
- 3 ripe plantains
Instructions
Now let’s get cooking!
- First, wash your rice under cold water until the water runs clear, then set it aside.
- In a large pot, heat up the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the pureed tomatoes and red bell pepper, then let it cook down for about 10 minutes, stirring occasionally.
- Add the tomato paste, thyme, curry powder, salt, and pepper. Give it a good stir and let it simmer for another 5 minutes.
- Pour in the chicken broth or water and bring it to a boil. Once boiling, add the washed rice and the chicken pieces. Stir everything together.
- Reduce the heat to low and cover the pot. Let it cook for about 25-30 minutes or until the rice is fluffy and the chicken is cooked through.
- While the Jollof is cooking, peel and slice your plantains. Heat a separate pan with oil and fry the plantain slices until golden brown on both sides. Remove and drain on paper towel.
- Once the rice is done, fluff it up with a fork and serve it alongside the chicken and those crispy fried plantains. Garnish with some fresh herbs or extra onions, if you like!
