Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1 cup sour cream
  • 1/2 cup chopped green onions (optional)
  • 1 can (15 oz) black beans, rinsed and drained (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, 1/2 cup of cheese, and half of the enchilada sauce. If you are using black beans, add them to the mixture along with salt and pepper to taste.
  3. Place a few spoonfuls of the chicken mixture on each tortilla, then roll them up tightly. Place the rolled tortillas seam-side down in a greased baking dish.
  4. Pour the remaining enchilada sauce over the top of the rolled tortillas, ensuring they are well-coated.
  5. Sprinkle the remaining cheese on top, followed by green onions if desired.
  6. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  7. Once out of the oven, let it cool for a few minutes, then serve with a dollop of sour cream on top.
