Bringhe Recipe
This dish is often served at celebrations and family gatherings, making it a perfect comfort food. The infusion of saffron or turmeric gives the rice a beautiful color, while the mix of meat and vegetables adds depth and texture.

Ingredients:
- 2 cups of glutinous rice
- 4 cups of coconut milk
- 1 tablespoon of turmeric powder
- 1 onion, minced
- 3 cloves of garlic, minced
- 1 carrot, diced
- 1 bell pepper, diced
- 1 cup of cooked chicken, shredded
- 1/2 cup of green peas
- 2 tablespoons of fish sauce
- Salt and pepper to taste
- Sliced boiled eggs for garnish (optional)
- Chopped green onions for garnish (optional)
Instructions:
- Rinse the glutinous rice in cold water until the water runs clear. Drain and set aside.
- In a large pot, combine the coconut milk and turmeric powder. Stir until well mixed.
- Add the minced onion and garlic to the pot, and cook over medium heat until the onion is translucent.
- Introduce the rinsed glutinous rice to the pot. Stir occasionally to soak the rice in the coconut mixture.
- Once the rice has absorbed some liquid, gently mix in the diced carrot, bell pepper, shredded chicken, and green peas.
- Then, pour in the fish sauce and season with salt and pepper. Allow the mixture to simmer on low heat, covering the pot to trap the steam.
- Cook for about 25-30 minutes or until the rice becomes tender and fully cooked. Stir occasionally to prevent sticking.
- Once done, remove from heat and let it sit covered for a few minutes.
- To serve, fluff the Bringhe with a fork and garnish with sliced boiled eggs and chopped green onions if desired.
