Ingredients:
- 2 cups basmati rice
- 1 lb mutton (or lamb), cut into pieces
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 2 medium carrots, julienned
- 1/2 cup raisins
- 1/2 cup slivered almonds or pistachios (optional)
- 4 cups water
- 3 tablespoons vegetable oil or ghee
- 1 teaspoon cumin seeds
- 1 teaspoon cardamom pods
- 1 cinnamon stick
- Salt to taste
- Black pepper to taste
Instructions:
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
- In a large pot, heat the vegetable oil or ghee over medium heat. Add the sliced onions and sauté until golden brown.
- Add the minced garlic and mutton pieces to the pot. Cook until the mutton is browned on all sides.
- Add the cumin seeds, cardamom pods, cinnamon stick, salt, and black pepper to the pot. Stir well to combine, then add the four cups of water.
- Bring the mixture to a boil, then cover and let it simmer for about 1.5 hours, or until the mutton is tender.
- Once the mutton is tender, remove it from the pot and set aside. Strain the broth and return it to the pot.
- Add the soaked and drained basmati rice to the pot of broth. Bring it to a gentle boil, then cover and simmer on low heat until the rice is fully cooked and the broth is absorbed, about 20 minutes.
- While the rice is cooking, in a separate pan, sauté the julienned carrots in a little oil until softened. Add the raisins and nuts, if using, and cook for another minute.
- Once the rice is done, fluff it with a fork and gently fold in the sautéed carrots, raisins, and nuts. Place the cooked mutton on top of the rice.
- To serve, spoon the Kabuli Mutton Pulao onto plates and enjoy this hearty dish with family and friends!
