  • 1 cup cornmeal

  • 1 tablespoon butter
  • 1/4 cup molasses
  • 1 1/4 teaspoons salt
  • 2 1/2 to 3 cups all-purpose flour
  • 2 teaspoons active dry yeast
  • 1/4 cup warm water (110°F)

Instructions

  1. Start by combining the cornmeal and boiling water in a large mixing bowl. Stir until smooth, and let it sit until it cools to lukewarm.
  2. Once cooled, add the butter, molasses, and salt to the cornmeal mixture. Mix thoroughly.
  3. In a separate small bowl, dissolve the yeast in the warm water and let it sit for about 5 minutes, until it foams. Then, add the yeast mixture to the cornmeal mixture.
  4. Gradually add the all-purpose flour, one cup at a time, mixing until a soft dough forms. You may not need all the flour, or you may need a bit more.
