Apple Enchiladas

Ingredients

  • 4 medium apples, peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 8 flour tortillas
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1 cup water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced apples, granulated sugar, and cinnamon. Mix well to ensure that the apples are evenly coated.
  3. Heat a skillet over medium heat and melt the unsalted butter. Stir in the brown sugar, water, and vanilla extract. Bring to a boil, then reduce the heat and simmer for about 5 minutes.
  4. On each tortilla, place a generous scoop of the apple mixture down the center. Roll the tortilla around the filling, tucking in the ends as you go.
  5. Place the rolled enchiladas seam-side down in a greased baking dish. Pour the warm butter and sugar mixture over the top, making sure to cover all the enchiladas.
  6. Bake in the preheated oven for 25–30 minutes, or until the tortillas are golden brown and crispy.
  7. Remove the dish from the oven and let it cool for a few minutes. Serve warm, optionally topped with vanilla ice cream or whipped cream for an extra indulgence!
