Apple Enchiladas
These Apple Enchiladas are a fantastic way to enjoy the flavors of baked apples and cinnamon wrapped in a warm tortilla. They are quick to prepare and even quicker to disappear once they’re served!

Ingredients
- 4 medium apples, peeled, cored, and sliced
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 8 flour tortillas
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1 cup water
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the sliced apples, granulated sugar, and cinnamon. Mix well to ensure that the apples are evenly coated.
- Heat a skillet over medium heat and melt the unsalted butter. Stir in the brown sugar, water, and vanilla extract. Bring to a boil, then reduce the heat and simmer for about 5 minutes.
- On each tortilla, place a generous scoop of the apple mixture down the center. Roll the tortilla around the filling, tucking in the ends as you go.
