Ingredients
- 500 grams fresh spinach, washed and chopped
- 200 grams paneer, cut into cubes
- 1 medium onion, finely chopped
- 2 tomatoes, pureed
- 2-3 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- ½ teaspoon turmeric powder
- ½ teaspoon red chili powder (optional)
- 2 tablespoons cooking oil or ghee
- Salt to taste
- 2 tablespoons cream (optional, for garnish)
Instructions
- In a large pot, bring water to boil. Add the chopped spinach and blanch for about 2-3 minutes until wilted. Remove from heat and immediately transfer the spinach to ice-cold water to stop the cooking process. Drain the spinach and blend it into a smooth paste.
- In a heavy-bottomed pan, heat the oil or ghee over medium heat. Add the cumin seeds and allow them to splutter.
- Add the finely chopped onions and sauté until they turn golden brown. Then, add the ginger-garlic paste and slit green chilies, and cook for another minute.
- Stir in the pureed tomatoes along with the turmeric powder, red chili powder, and salt. Cook until the oil starts to separate from the mixture.
- Add the spinach puree to the pan and mix well. Allow it to cook for 5-7 minutes, stirring occasionally.
- Gently add the paneer cubes and garam masala to the spinach mixture. Cook for another 5 minutes, allowing the paneer to absorb the flavors.
- If desired, stir in the cream for added richness. Adjust the seasoning as necessary.
- Serve hot with naan, roti, or rice. Garnish with a drizzle of cream and enjoy your homemade Saag Paneer!
