  • 2-3 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder (optional)
  • 2 tablespoons cooking oil or ghee
  • Salt to taste

Instructions

  1. In a large pot, bring water to boil. Add the chopped spinach and blanch for about 2-3 minutes until wilted. Remove from heat and immediately transfer the spinach to ice-cold water to stop the cooking process. Drain the spinach and blend it into a smooth paste.
  2. In a heavy-bottomed pan, heat the oil or ghee over medium heat. Add the cumin seeds and allow them to splutter.
  3. Add the finely chopped onions and sauté until they turn golden brown. Then, add the ginger-garlic paste and slit green chilies, and cook for another minute.
  4. Stir in the pureed tomatoes along with the turmeric powder, red chili powder, and salt. Cook until the oil starts to separate from the mixture.
  5. Add the spinach puree to the pan and mix well. Allow it to cook for 5-7 minutes, stirring occasionally.
  6. Gently add the paneer cubes and garam masala to the spinach mixture. Cook for another 5 minutes, allowing the paneer to absorb the flavors.
