Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 6 slices of bacon, chopped
  • 8 oz (225g) mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Chopped parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper and add them to the skillet, skin-side down. Cook until the skin is crispy and golden brown, about 5-7 minutes. Flip and cook for another 5 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped bacon and cook until crispy. Add the sliced mushrooms and minced garlic, sautéing until the mushrooms are tender.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and then add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy.
  5. Return the chicken thighs to the skillet, spooning some of the sauce over the top. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Once done, remove from the oven and let it rest for a few minutes. Garnish with chopped parsley before serving.
