Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 4 tablespoons olive oil
- 2 medium onions, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, cut into cubes
- 3 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 bay leaf
Instructions
- Preheat your oven to 325°F (165°C).
- In a large oven-safe pot, heat 2 tablespoons of olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.
- In the same pot, add the remaining olive oil and sauté the onions until they are translucent, about 5 minutes. Add the garlic and cook for another minute.
- Return the beef to the pot, and add the carrots and potatoes. Stir to combine all the ingredients.
- Add the beef broth, red wine (if using), tomato paste, thyme, rosemary, salt, pepper, and bay leaf. Stir well and bring to a simmer.
- Cover the pot with a lid and transfer it to the preheated oven. Bake for about 2 to 2.5 hours, or until the beef is tender and the flavors have melded beautifully.
- Once done, remove the pot from the oven, discard the bay leaf, and adjust seasoning if necessary. Let the stew cool slightly before serving.
