Ingredients

  • 1 lb. ground beef
  • 2 medium eggplants, sliced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a couple of tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until they are soft and fragrant.
  3. Add the ground beef to the skillet. Cook until it’s browned and fully cooked, breaking it apart with a spoon as it cooks. Drain any excess grease.
