Ingredients
- 1 cup basmati rice
- 2 cups vegetable broth
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup bell peppers, diced (any color you prefer)
- 1 cup green peas (fresh or frozen)
- 2 tablespoons olive oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Then, stir in the minced garlic and cook for an additional minute until fragrant.
- Next, incorporate the diced carrots and bell peppers, cooking for about 5-7 minutes until they begin to soften.
- Stir in the turmeric powder and mix well, ensuring the vegetables are evenly coated.
- Add the rinsed basmati rice to the pan and toast it for 2-3 minutes, stirring gently to combine with the vegetables.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pan. Let it simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
- After removing the pan from heat, let it sit covered for an additional 5 minutes. Fluff the rice with a fork and gently fold in the green peas.
- Season with salt and pepper to taste, and garnish with fresh parsley before serving.
