Delicious Banana Cream Pie

Ingredients:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 2 cups whole milk
  • ½ cup granulated sugar (for pudding)
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter (for pudding)
  • 1 teaspoon vanilla extract
  • 3 large ripe bananas, sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes, then remove and let it cool.
  4. In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt over medium heat. Bring to a simmer, stirring constantly until thickened.
  5. In a separate bowl, whisk the egg yolks. Slowly add a few spoonfuls of the hot milk mixture to the egg yolks, whisking continuously to temper them.
  6. Pour the egg mixture back into the saucepan and continue to cook for an additional 2 minutes, stirring constantly.
  7. Remove from heat and stir in the butter and vanilla extract. Allow the mixture to cool slightly.
  8. While the filling cools, slice the bananas and layer them in the cooled crust.
  9. Pour the pudding mixture over the bananas and spread evenly.
  10. In a large bowl, whip the heavy cream and powdered sugar until soft peaks form. Spread over the pie filling.
  11. Refrigerate for at least 4 hours, or until set. Garnish with additional banana slices if desired, then slice and serve!
