Tamales de Frijol (Oaxacan Black Bean Tamales)

Ingredients

  • 2 cups masa harina
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable shortening or lard
  • 1 to 1 1/4 cups vegetable broth
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 cup diced onion
  • 30 dried corn husks, soaked in warm water for 30 minutes

Instructions

  1. In a large mixing bowl, combine masa harina, baking powder, and salt.
  2. In a separate bowl, beat the vegetable shortening or lard until fluffy. Gradually mix in the masa harina mixture, then slowly add the vegetable broth until a dough forms that holds together but is not sticky.
  3. In another bowl, mash the black beans with cumin, chili powder, and diced onion until somewhat smooth, leaving some texture for added bite.
  4. Take a soaked corn husk and spread about 1/4 cup of the masa dough onto the center of the husk, leaving about 1 inch at the bottom and sides clear.
  5. Add about 2 tablespoons of the black bean mixture on top of the masa.
  6. Fold the sides of the husk in toward the center, then fold the bottom up over the tamale to secure the filling. Repeat with remaining ingredients.
  7. Place the tamales upright in a steamer basket. Cover with additional soaked corn husks or a damp cloth to retain moisture during steaming.
  8. Steam for about 1 to 1.5 hours, or until the masa easily pulls away from the husk. Add more water to the steamer as needed to keep the steam going.
  9. Once cooked, let them cool slightly before serving. Enjoy your homemade Tamales de Frijol with your favorite salsa or sauce!

These Tamales de Frijol are a fantastic way to explore Oaxacan cuisine in your own kitchen. They are comforting, flavorful, and a true labor of love. Enjoy each bite!
