Ingredients
Here’s what you’ll need to make these tarts:
- 1 ½ cups of all-purpose flour
- ½ cup of unsalted butter, chilled and diced
- ¼ teaspoon of salt
- 1 to 4 tablespoons of cold water
- 1 cup of packed brown sugar
- ½ cup of corn syrup
- 2 large eggs
- 2 tablespoons of unsalted butter, melted
- 1 teaspoon of vanilla extract
- ½ cup of raisins or pecans (optional)
Instructions
Let’s get down to business and make these delectable tarts!
- In a large bowl, combine the flour and salt. Add the chilled, diced butter and mix until the mixture resembles coarse crumbs.
- Stir in the cold water, one tablespoon at a time, until the dough comes together. Be careful not to overmix! Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for about 30 minutes.
- Preheat your oven to 375°F (190°C).
- Roll out the chilled dough on a floured surface to about ⅛ inch thick. Cut out circles and fit them into a greased muffin tin, creating mini crusts.
- In another bowl, combine the brown sugar, corn syrup, eggs, melted butter, and vanilla extract. Mix until well combined.
- If you’re adding raisins or pecans, sprinkle them into the pastry-lined muffin tins, then pour the filling over the top.
- Bake in the preheated oven for 15-20 minutes or until the filling is bubbly and the crust is lightly golden.
- Let them cool for a few minutes before removing from the tin. Enjoy your homemade Canadian Butter Tarts warm or at room temperature!
Trust me, once you take a bite, you won’t be able to resist going back for seconds. Happy baking, y’all!
