Tiropites (Greek Cheese Filled Triangles)

Tiropites - Greek Cheese Filled Triangles

Ingredients

  • 1 package of phyllo dough (thawed)
  • 2 cups of feta cheese, crumbled
  • 1 cup of ricotta cheese
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 1 egg (beaten)
  • Salt and pepper to taste
  • Additional olive oil for brushing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the crumbled feta cheese, ricotta cheese, chopped parsley, beaten egg, salt, and pepper. Mix until well combined.
  3. Lay out one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Layer another sheet on top and brush it again with olive oil.
  4. Cut the layered phyllo sheets into long strips, about 3 inches wide.
  5. Place a tablespoon of the cheese filling at one end of each strip. Fold the corner of the phyllo over the filling to form a triangle. Continue folding the triangle along the strip until you reach the end, sealing the filling inside.
  6. Place the finished triangles on a baking sheet lined with parchment paper. Brush the tops with additional olive oil to achieve a golden color.
