  • 8 corn tortillas
  • 1 can (15 oz) black beans, rinsed and drained

  • 1 teaspoon chili powder
  • 2 cups enchilada sauce (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the black beans, corn, diced bell pepper, zucchini, cumin, and chili powder. Mix well until the ingredients are evenly distributed.
  3. Spread a thin layer of enchilada sauce on the bottom of a baking dish to prevent sticking.
