- 8 corn tortillas
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cups enchilada sauce (store-bought or homemade)
- 2 cups shredded cheese (cheddar or a blend)
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the black beans, corn, diced bell pepper, zucchini, cumin, and chili powder. Mix well until the ingredients are evenly distributed.
