Spiced Cherry Chutney
This delightful chutney is a great way to preserve the vibrant flavors of cherries while infusing them with spices that complement their natural sweetness.

Ingredients
- 2 cups pitted cherries, fresh or frozen
- 1 cup onion, finely chopped
- 1 cup sugar
- 1 cup vinegar (apple cider or white)
- 1 tablespoon grated ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon cloves
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional, for heat)
Instructions
- In a large saucepan, combine the cherries, onion, sugar, and vinegar.
- Add the grated ginger, cinnamon, allspice, cloves, salt, and cayenne pepper into the mixture.
- Bring everything to a boil over medium heat, stirring occasionally until the sugar has dissolved.
- Reduce the heat to low and let the mixture simmer for about 30 minutes, or until it thickens to your desired consistency. Be sure to stir periodically to prevent sticking.
- Once thickened, remove the saucepan from the heat and let it cool slightly.
- Transfer the chutney into sterilized jars, sealing them while the chutney is still warm. Allow the jars to cool completely at room temperature.
- This chutney can be enjoyed immediately but will develop even more flavor if allowed to sit in the fridge for a couple of days.
- Store in the refrigerator for up to two weeks or can it for longer shelf life.
