- 1 lb (450g) chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups (480ml) chicken broth
- 1 can (15 oz) diced tomatoes
- 1 cup (about 150g) elbow macaroni
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until softened.
- Add in the minced garlic and allow it to cook for another minute until fragrant.
