Traditional Homemade Vietnamese Chicken Pho

Ingredients

Here’s what you’ll need to prepare this mouthwatering Chicken Pho:

  • 1 whole chicken (about 3-4 lbs)
  • 8 cups of water
  • 2 large onions, halved
  • 2-inch piece of ginger, halved lengthwise
  • 1 tablespoon coriander seeds
  • 1 cinnamon stick
  • 4-star anise
  • 1 tablespoon fish sauce
  • Salt to taste
  • Rice noodles (bánh phở)
  • Fresh herbs (basil, cilantro, mint)
  • Lime wedges
  • Sliced jalapeños (optional)
  • Bean sprouts (optional)

Instructions

Follow these steps to make your Chicken Pho:

  1. In a large pot, add the whole chicken and cover it with 8 cups of water. Bring to a boil over high heat, then reduce to a simmer.
  2. While the chicken is simmering, char the onions and ginger on an open flame or in a dry skillet until brown and fragrant. Add them to the pot.
  3. Add the coriander seeds, cinnamon stick, star anise, and fish sauce to the pot. Season with salt.
