Ingredients

  • 200g rice vermicelli noodles
  • 300g chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 100g bean sprouts
  • 2 spring onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon curry powder
  • 1 teaspoon chili paste (adjust to taste)
  • Salt and pepper, to taste

Instructions

  1. Begin by soaking the rice vermicelli noodles in hot water for about 10 minutes, or until they are tender. Drain and set aside.
  2. In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the sliced chicken and sauté until it’s cooked through, about 5-7 minutes. Transfer the chicken to a plate and set aside.
