- 2-3 dried pasilla or guajillo chilies, seeds removed and soaked in hot water
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano

- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the pork or beef pieces in batches, browning them on all sides. Remove the meat and set aside.
