- 200g spaghetti
- 100g pancetta or guanciale, diced
- 2 large eggs
- 50g Pecorino Romano cheese, grated
- Black pepper, freshly cracked
- Salt, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Start by boiling a large pot of salted water. Once it’s at a rolling boil, add the spaghetti and cook according to package instructions until al dente.
- While the spaghetti is cooking, heat a large skillet over medium heat. Add the diced pancetta or guanciale and cook until crispy, around 4-5 minutes. Remove from the heat and set aside.
- In a separate bowl, whisk together the eggs, grated Pecorino Romano cheese, and a generous amount of black pepper. This will be your creamy sauce.
- Once the spaghetti is cooked, reserve a cup of pasta water, and then drain the pasta.
