Ingredients
- 2 medium-sized eggplants
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Start by slicing the eggplants in half lengthwise. Using a spoon, scoop out some of the flesh to create a little well in each half. This will help the eggplants cook evenly and allow us to fill them later.
- Drizzle the olive oil over the eggplants and rub them with salt, black pepper, garlic powder, and paprika, ensuring they are well seasoned.
- Place the eggplant halves on a baking sheet lined with parchment paper, cut side up. Roast in the oven for about 25 minutes or until they are tender and slightly golden.
- Meanwhile, prepare the filling by combining the diced tomatoes and remaining eggplant flesh in a bowl. Mix well and season with salt and pepper to taste.
