- 1 liter of apple juice
- 3 cups of elderflower cordial
- 1 lemon, juiced
- 1 package of Certo liquid pectin (or any fruit pectin)
- 4 cups of granulated sugar

Instructions
- First things first, grab all your ingredients and make sure everything is ready to go. Clean your jars and lids to make sure they’re nice and ready for that sweet jelly.
- In a large pot, combine the apple juice, elderflower cordial, and the juice from the lemon. Stir it up and bring that mixture to a boil.
- Once boiling, it’s time to add in the pectin. Stir it in really well so it gets mixed up nicely.
- After you’ve stirred in the pectin, let it boil again for about a minute. We want it to bubble and do its thing!
- Now sprinkle in that sugar all at once, stirring continuously until it all dissolves. Bring that mixture back to a rolling boil for another full minute.
- Turn off the heat and skim off any foam that forms on the surface; you want that jelly to be nice and clear.
- Pour your hot jelly into the sterilized jars, leaving a little bit of space at the top. Make sure to seal those jars tightly with the lids.
- Let the jars cool down completely at room temperature. Once they’re cool, you can store them in the fridge or even in the pantry if you prefer.
