To make these delicious Enchiladas, you will need the following ingredients:

  • 12 corn tortillas
  • 2 cups shredded cooked chicken

  • 1 cup diced onions
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder

Instructions

Follow these simple steps to create your Enchiladas:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onions and cook until they are soft and translucent, about 3-4 minutes.
  3. In a bowl, combine the shredded chicken, half of the shredded cheese, chili powder, garlic powder, salt, and pepper. Mix well.
  4. To soften the corn tortillas, you can either wrap them in a damp paper towel and microwave them for 30 seconds or warm them in a dry skillet over low heat.
