Enchiladas
Enchiladas are a traditional Mexican dish that consists of rolled tortillas filled with various ingredients, covered with a savory sauce, and baked to perfection. They are versatile and can be customized based on your taste preferences.

Ingredients
To make these delicious Enchiladas, you will need the following ingredients:
- 12 corn tortillas
- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 cups enchilada sauce (red or green, your choice)
- 1 cup diced onions
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
Follow these simple steps to create your Enchiladas:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the diced onions and cook until they are soft and translucent, about 3-4 minutes.
- In a bowl, combine the shredded chicken, half of the shredded cheese, chili powder, garlic powder, salt, and pepper. Mix well.
- To soften the corn tortillas, you can either wrap them in a damp paper towel and microwave them for 30 seconds or warm them in a dry skillet over low heat.
- Pour a small amount of enchilada sauce into the bottom of a 9×13 inch baking dish to create a base.
- Take a tortilla, fill it with a generous amount of the chicken mixture, roll it up, and place it seam-side down in the baking dish. Repeat this with all the tortillas.
- Once all the enchiladas are in the dish, pour the remaining enchilada sauce over the top, ensuring that all tortillas are well covered.
- Sprinkle the remaining cheese over the top of the sauce.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
- Once out of the oven, let it cool for a few minutes. Garnish with fresh cilantro if desired, and serve hot.
Enjoy your homemade Enchiladas with your favorite sides like rice, beans, or a fresh salad. This dish is not only comforting but also perfect for sharing with family and friends. Happy cooking!
