Ingredients
- 1 large fennel bulb, trimmed and thinly sliced
- 1 tablespoon olive oil
- 1 French baguette, sliced diagonally
- 2 cloves garlic, peeled and halved
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, torn
- Salt and freshly ground black pepper, to taste
- Balsamic glaze, for drizzling (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the sliced fennel with olive oil. Toss until it is well coated. Spread the fennel mixture on the prepared baking sheet in a single layer.
- Roast in the preheated oven for about 15 to 20 minutes, or until the fennel is tender and slightly caramelized. Remove from the oven and let it cool slightly.
- While the fennel is roasting, arrange the baguette slices on another baking sheet. Toast the slices in the oven for 5 to 7 minutes until they are crisp and golden brown.
- Assemble the bruschetta: take a toasted baguette slice and rub the cut side of the garlic onto it for a burst of flavor. Top each slice with a generous spoonful of the roasted fennel.
