Ingredients

  • For the sponge cake:
    • 4 large eggs
    • 120g (1/2 cup) granulated sugar
    • 120g (1 cup) all-purpose flour
    • 30g (2 tbsp) unsalted butter, melted
    • 1 tsp vanilla extract
  • For the pastry cream:
    • 500ml (2 cups) whole milk
    • 150g (3/4 cup) granulated sugar
    • 4 large egg yolks
    • 60g (1/2 cup) cornstarch
    • 100g (1/2 cup) unsalted butter, diced
    • 1 tsp vanilla extract
  • For assembly:
    • 300g (about 10-12) fresh strawberries, hulled and halved
    • Fresh cream for decoration (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a round cake pan with parchment paper.
  2. To make the sponge cake, whisk together the eggs and sugar until pale and fluffy. Gradually fold in the flour and melted butter, being careful not to deflate the batter.
  3. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted comes out clean. Let it cool completely.
  4. For the pastry cream, heat the milk in a saucepan until it begins to steam. Meanwhile, whisk together the sugar, egg yolks, and cornstarch in a bowl.
  5. Once the milk is steaming, slowly pour it into the egg mixture while whisking continuously. Transfer the mixture back to the saucepan and cook over medium heat until it thickens. Remove from heat, stir in the butter and vanilla extract, and let it cool.
  6. Once the sponge cake is cooled, slice it in half horizontally. Place one layer on a serving plate and spread half of the pastry cream over it.
  7. Arrange half of the halved strawberries on top of the cream, then add the second layer of sponge cake. Spread the remaining pastry cream on top and decorate with the remaining strawberries.
