- 1 tablespoon olive oil
- 1 cup feta cheese, crumbled
- 1 cup ricotta cheese
- 2 eggs, lightly beaten
- 1 teaspoon dried mint or a handful of fresh mint, chopped
- Salt and pepper to taste
- 1 package of phyllo pastry (about 20 sheets)
- Butter, for brushing

- Preheat your oven to 375°F (190°C).
