This dish not only looks beautiful but also offers a burst of flavors that are both heartwarming and satisfying. Let’s dive into the ingredients we need to create this delicious meal.

Ingredients:
- 4 large ripe tomatoes
- 4 green bell peppers
- 1 cup uncooked rice (long grain or medium grain)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh dill, chopped
- 1/2 cup olive oil
- Salt and pepper to taste
- 1/2 teaspoon cinnamon (optional)
- 2 cups vegetable broth (or water)
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the tops off the tomatoes and green peppers, and carefully scoop out the insides using a spoon. Set the tops aside for later use.
- In a large skillet, heat 1/4 cup of olive oil over medium heat. Add the chopped onion and garlic and sauté until the onions become translucent.
- Stir in the rinsed rice and mix well, allowing it to toast slightly for about 2 minutes.
- Add the chopped tomato flesh, parsley, dill, salt, pepper, and cinnamon (if using) to the rice mixture. Cook for an additional 5 minutes.
- Gradually pour in the vegetable broth, bringing the mixture to a simmer. Cover and cook until the rice absorbs most of the liquid, about 10-15 minutes.
- Stuff each tomato and green pepper with the rice mixture until full. Place the tops back on the vegetables.
- Drizzle the remaining olive oil over the stuffed vegetables and place them in a baking dish. Add a splash of water to the bottom of the dish to keep the vegetables moist while cooking.
- Cover the dish with aluminum foil and bake for 30-40 minutes. Remove the foil for the last 10-15 minutes to allow the tops to lightly brown.
- Once cooked, remove from the oven and let it rest for a few minutes before serving. Enjoy your flavorful gemista hot or at room temperature!
