Green gazpacho –Cooking is one of my favorite ways to unwind and express creativity, and today I’m excited to share a refreshing recipe for Green Gazpacho. This vibrant soup is perfect for warm days, offering a burst of flavor and nutrition. Let’s dive right in!
Green Gazpacho
This Green Gazpacho is not only delicious but also a feast for the eyes. The blend of fresh vegetables creates a beautiful, rich green color that is as appetizing as it is healthy.

Ingredients:
- 1 large cucumber, peeled and chopped
- 2 green bell peppers, chopped
- 1 green jalapeño, seeds removed and chopped
- 2 cups fresh spinach or kale
- 1 small red onion, chopped
- 3 cups vegetable broth
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions:
- In a blender or food processor, combine the chopped cucumber, green bell peppers, jalapeño, spinach or kale, red onion, and minced garlic. Blend until smooth.
- Gradually add the vegetable broth while blending to reach your desired consistency.
- Next, add the olive oil and red wine vinegar. Blend again to incorporate all the ingredients thoroughly.
- Season with salt and pepper to taste; blend once more to mix the seasonings evenly.
- Chill the gazpacho in the refrigerator for at least an hour before serving for the best flavor.
- When you’re ready to serve, give the gazpacho a good stir. Serve it in bowls and garnish with fresh herbs if desired.
