- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup smooth peanut butter
- 1 cup powdered sugar
- Green food coloring
- Chocolate candies for eyes (e.g., M&Ms or chocolate chips)
Instructions:
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Next, add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until well combined.
- Stir in the boiling water carefully. The batter will be thin, but that’s okay!
- Fill each cupcake liner about two-thirds full with batter. Bake for 20-25 minutes, or until a toothpick inserted comes out clean. Allow the cupcakes to cool completely on a wire rack.
