Roast Chicken with Maple Macadamia Stuffing

Ingredients
- 1 whole chicken (about 4-5 lbs)
- 1 cup macadamia nuts, chopped
- 1/2 cup breadcrumbs
- 1/4 cup maple syrup
- 1/4 cup butter, melted
- 1 onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (such as thyme or rosemary)
Instructions
- Preheat your oven to 375°F (190°C).
- In a pan, melt the butter and sauté the onion and garlic until they are translucent. Allow them to cool slightly.
- In a large bowl, combine the chopped macadamia nuts, breadcrumbs, sautéed onion and garlic, maple syrup, salt, and pepper. Mix until everything is well incorporated to create the stuffing.
- Carefully loosen the skin of the chicken from the breast and thighs. Fill the space with the prepared stuffing, ensuring it’s packed in well.
- Season the outside of the chicken with salt and pepper. Place any remaining stuffing in the cavity of the chicken.
- Place the chicken in a roasting pan and cover it loosely with aluminum foil.
