Triple Chocolate Instant Pot Cheesecake

Ingredients
- 1 ½ cups chocolate cookie crumbs
- ¼ cup unsalted butter, melted
- 2 cups cream cheese, softened
- ¾ cup granulated sugar

- 1 cup semi-sweet chocolate chips, melted
- ½ cup milk chocolate chips, melted
- ½ cup white chocolate chips, melted

Instructions
- Start by preparing the crust. In a medium bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 7-inch springform pan.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and beat until well combined.
- Add in the vanilla extract, mixing until combined. Then, one at a time, add the eggs, beating on low speed just until blended. Avoid overmixing!
