Irish Beef Stew

Ingredients:

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef stock
  • 3 large carrots, sliced
  • 2 potatoes, peeled and diced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef chunks in batches, browning them on all sides. Remove and set aside.
  2. In the same pot, add the chopped onion and cook until translucent, about 5 minutes. Then, add the minced garlic and sauté for an additional minute until fragrant.
  3. Return the beef to the pot and stir in the tomato paste, Worcestershire sauce, dried thyme, and dried rosemary. Cook for a couple of minutes to combine the flavors.
  4. Pour in the beef stock, ensuring that all the beef is covered. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 hours.
  5. After the time has elapsed, add the carrots and potatoes to the stew. Season with salt and pepper to taste. Continue to simmer, covered, for another 30-45 minutes, or until the vegetables are tender and the beef is fork-tender.
  6. Serve hot, garnished with freshly chopped parsley. Enjoy your warm bowl of Irish Beef Stew with a slice of crusty bread!
