Ingredients You’ll Need
- 1 cup of dried black-eyed peas
- 1 cup of long-grain rice
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced (any color you like)
- 2 tomatoes, chopped
- 4 cups of vegetable broth
- 1 teaspoon of paprika
- 1 teaspoon of black pepper
- Salt to taste
- 2 tablespoons of olive oil
- Fresh cilantro for garnish
Let’s Get Cooking!
- First things first, rinse your black-eyed peas and soak them overnight in water. This makes ’em nice and tender.
- In a large pot, heat the olive oil over medium heat. Toss in the chopped onion and garlic and sauté until they’re fragrant and golden brown.
- Add the diced bell pepper and cook it down for a few minutes until it starts to soften up.
- Stir in the chopped tomatoes, paprika, and black pepper. Let all these delicious veggies mingle together for about 5 minutes.
- Now, drain the soaked peas and add them to the pot, followed by the vegetable broth. Bring it all to a boil.
- Once boiling, lower the heat and let it simmer for about 30 minutes, or until the peas are tender.
- After that, it’s time to add the rice! Stir it in, and cover the pot to let it cook for another 20 minutes. Check occasionally, and add a splash more broth if it gets too dry.
- Lastly, once the rice is fluffy and the peas are cooked through, taste and add salt if needed. Get ready to serve it up!
