Ingredients:
- 250g plain flour
- 300g granulated sugar
- 40g cocoa powder
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 240ml vegetable oil
- 240ml buttermilk
- 2 large eggs
- 2 tbsp red food coloring
- 1 tsp vanilla extract
- 1 tsp white wine vinegar
For the Cream Cheese Frosting:
- 400g cream cheese
- 100g unsalted butter
- 400g icing sugar
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 170°C (150°C fan) and grease three 20cm round cake tins.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, bicarbonate of soda, and salt.
- In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.
- Gradually combine the wet and dry ingredients, mixing until just combined and smooth. Do not overmix.
- Divide the batter evenly between the prepared cake tins. Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean.
- Allow the cakes to cool in the tins for about 10 minutes, then turn out onto a wire rack to cool completely.
- For the frosting, beat the cream cheese and butter together until smooth. Gradually add the icing sugar and vanilla extract, mixing until fluffy and well combined.
