- 2 lbs chicken, cut into pieces
- 3 tbsp oil (vegetable or coconut oil)

- 2-3 tbsp vinegar (preferably malt vinegar)
- 1 tbsp tamarind paste
- 1 tsp sugar
- 1 tsp salt (to taste)
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp black peppercorns
- 2-3 dried red chilies (adjust to taste)
- 1/2 tsp turmeric powder
- 1 tsp garam masala
Instructions
- Start by marinating the chicken. In a large mixing bowl, combine the chicken pieces, vinegar, turmeric powder, and salt. Let it marinate for at least 1 hour, or overnight for best results.
- In a skillet, dry roast the cumin, coriander, black peppercorns, and dried red chilies over medium heat until fragrant. Let them cool, then grind into a fine powder.
- Heat oil in a large pot over medium heat. Add chopped onions and sauté until they turn golden brown.
- Add garlic, ginger, and green chilies to the pot. Sauté for another 2-3 minutes until the raw smell disappears.
