Delicious Chicken Vindaloo

Ingredients

  • 2 lbs chicken, cut into pieces
  • 3 tbsp oil (vegetable or coconut oil)
  • 1 large onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, slit lengthwise
  • 2-3 tbsp vinegar (preferably malt vinegar)
  • 1 tbsp tamarind paste
  • 1 tsp sugar
  • 1 tsp salt (to taste)
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp black peppercorns
  • 2-3 dried red chilies (adjust to taste)
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala

Instructions

  1. Start by marinating the chicken. In a large mixing bowl, combine the chicken pieces, vinegar, turmeric powder, and salt. Let it marinate for at least 1 hour, or overnight for best results.
  2. In a skillet, dry roast the cumin, coriander, black peppercorns, and dried red chilies over medium heat until fragrant. Let them cool, then grind into a fine powder.
  3. Heat oil in a large pot over medium heat. Add chopped onions and sauté until they turn golden brown.
  4. Add garlic, ginger, and green chilies to the pot. Sauté for another 2-3 minutes until the raw smell disappears.
  5. Now, add the marinated chicken to the pot and stir well. Cook for about 10 minutes or until the chicken starts to brown.
  6. Add the ground spice mix, sugar, tamarind paste, and a bit of water if needed. Stir everything together.
  7. Cover and simmer on low heat for about 30-35 minutes until the chicken is fully cooked and tender, stirring occasionally.
  8. Once done, sprinkle garam masala on top and let it rest for a few minutes before serving.

Serve your Chicken Vindaloo hot with steamed rice or warm naan bread for a meal that everyone will rave about. Enjoy the explosion of flavors!
