Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup ground almonds or hazelnuts
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup raspberry or apricot jam (or your favorite fruit preserve)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, ground almonds (or hazelnuts), ground cinnamon, and salt.
