Classic Italian Vegetable Minestrone Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 couple of carrots, diced
  • 1 couple of celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, cut into 1-inch lengths
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup pasta (like small shells or elbow macaroni)
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the diced carrots and celery, cooking until they soften, which should take another 5-7 minutes. Then, toss in the minced garlic and let it cook for about a minute until fragrant.
  3. Add the zucchini and green beans to the pot, mixing everything together nicely.
  4. Pour in the diced tomatoes along with their juices, and the vegetable broth. Stir it all up and bring it to a gentle boil.
  5. Once boiling, add your pasta and seasoning with salt and pepper. Reduce the heat and let it simmer until the pasta is al dente – usually about 7-10 minutes.
  6. Finally, stir in the cannellini beans and cook for an additional 5 minutes, just to heat them through. Taste it and adjust the seasoning if needed.
  7. Serve hot, garnished with some fresh basil or parsley for that extra pop of flavor. Enjoy your delicious bowl of Minestrone Soup!
