Moon Pies

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup marshmallow fluff
  • 8 ounces semisweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add in the egg and vanilla extract, and mix until well combined.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are firm. Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. Once the cookies are cool, spread a generous amount of marshmallow fluff on the flat side of one cookie and sandwich it with another cookie.
  9. Melt the chopped chocolate in a microwave-safe dish or over a double boiler. Dip each assembled Moon Pie in the melted chocolate, allowing the excess to drip off.
  10. Place the chocolate-dipped Moon Pies on parchment paper and let them set until the chocolate hardens.

And just like that, you have your very own batch of delicious Moon Pies! Enjoy them with friends, family, or all by yourself as a sweet treat that can take you down memory lane.
