If you’ve never had Chicken Tagine before, you’re in for a treat! This slow-cooked stew combines tender chicken with aromatic spices and vegetables, resulting in a dish that’s bursting with flavor. Let’s check out this beautiful image of the finished dish.

Ingredients:
- 2 pounds chicken thighs, skinless and boneless
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 1 can (14 ounces) diced tomatoes, drained
- 2 cups chicken broth
- 1 cup dried apricots, halved
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/2 cup whole almonds, toasted
- Fresh cilantro or parsley, for garnish
Instructions:
- In a large skillet or tagine, heat the olive oil over medium heat. Add the onions and garlic, and sauté until they become soft and fragrant.
- Add the chicken thighs to the pan, browning them on all sides. This should take about 5-7 minutes.
- Sprinkle in the ginger, cumin, coriander, cinnamon, cayenne, salt, and black pepper. Stir well to coat the chicken with the spices.
- Once the chicken is well-seasoned, add the drained tomatoes along with the chicken broth. Bring to a simmer.
- Add the dried apricots and chickpeas to the pot, then reduce the heat to low. Cover and let it cook for about 30-40 minutes, or until the chicken is tender and fully cooked through.
- During the last 10 minutes of cooking, stir in the toasted almonds for added crunch and flavor.
- Once done, remove from heat and allow it to rest for a few minutes. Serve garnished with fresh cilantro or parsley over a bed of fluffy couscous or rice.
