Mou Shu Pork Wraps

Ingredients
- 1 pound pork tenderloin, thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 2 green onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 4 large eggs, beaten
- 8 Chinese pancakes or tortillas
- Hoisin sauce, for serving
Instructions
- Begin by marinating the sliced pork tenderloin in soy sauce and sesame oil for about 20 minutes.
- In a large skillet or wok over medium heat, add a drizzle of oil and stir-fry the garlic and ginger until fragrant.
- Add the marinated pork to the skillet and cook until browned and cooked through, approximately 5-7 minutes. Remove the pork from the skillet and set aside.
- In the same skillet, add the shredded cabbage, carrots, and green onions. Stir-fry the vegetables for about 2-3 minutes until they are tender yet crisp.
- Push the vegetables to one side of the skillet and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the cooked pork back into the skillet, mixing everything together well. Allow all the flavors to meld for a couple of minutes on low heat.
- Warm the Chinese pancakes or tortillas in a separate pan or microwave. Once warm, assemble the wraps by placing a generous spoonful of the pork and vegetable mixture onto each wrap.
- Drizzle with hoisin sauce to taste, then fold the wrap or roll it up, and it’s ready to be enjoyed!
