Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup fresh berries (blueberries, raspberries, or strawberries)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Gently fold in the fresh berries, being careful to not mash them.
  7. Pour the batter into the prepared baking pan, spreading it evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
  10. If desired, dust with powdered sugar before serving for an extra touch of sweetness!

This lovely dish is perfect for gatherings or a cozy night in. Enjoy every bite and share the joy with those you love!
