Easy Homemade Strawberry Shortcake

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for strawberries)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for cream)

Instructions

  1. Preheat your oven to 425°F (220°C) and lightly grease a baking sheet.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.
  4. Add the milk and vanilla extract, stirring until just combined. Do not overmix.
  5. Turn the dough onto a lightly floured surface and gently knead a few times until it holds together.
  6. Pat or roll the dough into a 1-inch thick rectangle. Cut into rounds using a biscuit cutter or a glass.
  7. Place the rounds on the prepared baking sheet and bake for 15-18 minutes, or until lightly golden.
  8. While the shortcakes are baking, prepare the strawberries. In a medium bowl, combine the sliced strawberries with 1/4 cup of granulated sugar. Toss well and set aside to macerate.
  9. For the whipped cream, beat the heavy whipping cream, powdered sugar, and 1 teaspoon of vanilla in a large bowl until soft peaks form.
  10. Once the shortcakes have cooled, slice each one in half horizontally. Layer the bottom half with macerated strawberries and a generous dollop of whipped cream.
  11. Top with the other half of the shortcake and another layer of strawberries and whipped cream for a delightful finish.
  12. Serve immediately and enjoy this refreshing treat!
