Spiced Plum Jam with Cardamom and Cinnamon in a jar

Ingredients

  • 2 pounds ripe plums, pitted and chopped
  • 1 tablespoon lemon juice
  • 3 cups granulated sugar
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 packet (1.75 oz) fruit pectin

Instructions

  1. In a large pot, combine the chopped plums, lemon juice, and salt. Stir well to combine.
  2. Allow the mixture to sit for about 30 minutes. This helps to release the natural juices from the plums.
  3. After 30 minutes, add in the sugar, cardamom, and cinnamon. Stir gently over low heat until the sugar is dissolved completely.
  4. Increase the heat to medium-high and bring the mixture to a rolling boil. Stir continuously to prevent sticking.
  5. Once boiling, add in the fruit pectin, stirring for about 1-2 minutes until well incorporated. Continue boiling for an additional 1-2 minutes.
  6. To check for readiness, perform a gel test: drop a spoonful of jam onto a cold plate and run your finger through it. If it holds its shape, it’s ready. If not, boil for a minute or so longer and test again.
  7. Remove the pot from heat and skim off any foam that may have formed on the surface.
  8. Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Seal with lids immediately.
  9. Process the jars in a boiling water bath for 10 minutes to ensure a proper seal, then remove and let them cool completely.

Once your jam has cooled and sealed, it’s time to enjoy your homemade Spiced Plum Jam! Spread it generously on toast, mix it into yogurt, or use it in your baking. The warm spices will remind you of cozy evenings spent at home, making this recipe an all-time favorite.
